Blackened Rockfish Tacos with Cilantro Lime Slaw

Serves: 4
Ingredients:
1 lb rockfish fillets
2 tbsp blackening seasoning (or mix paprika, cayenne, garlic powder, onion powder, salt, pepper)
2 tbsp olive oil
8 small flour or corn tortillas
For the slaw:
2 cups shredded cabbage
¼ cup mayo
Juice of 1 lime
2 tbsp chopped cilantro
Salt to taste
For topping:
Diced avocado, pico de gallo, or a drizzle of chipotle mayo
Directions:
Mix slaw ingredients in a bowl and set aside.
Rub the fish with olive oil and blackening seasoning.
Heat a skillet or grill pan over medium-high heat and cook fish for about 3–4 minutes per side, until blackened and flaky.
Warm tortillas, flake the fish, and assemble tacos with slaw and toppings.
Flavor Tip: Add a squeeze of fresh lime and a pinch of sea salt right before serving — it makes the flavors pop.
