Grilled Cobia with Mango Salsa

Serves: 4


Ingredients:

  • 4 cobia fillets (about 6 oz each)

  • 2 tbsp olive oil

  • Juice of 1 lime

  • Salt and pepper to taste

  • 1 tsp paprika or Old Bay seasoning


For the Mango Salsa:

  • 1 ripe mango, diced

  • ½ red bell pepper, diced

  • ¼ red onion, finely chopped

  • 1 jalapeño, minced (optional)

  • Juice of 1 lime

  • 2 tbsp fresh cilantro, chopped

  • Pinch of salt


Directions:

  1. Heat your grill (or grill pan) to medium-high heat.

  2. Brush cobia with olive oil, lime juice, and seasonings.

  3. Grill 4–5 minutes per side, until opaque and lightly charred.

  4. Combine salsa ingredients in a bowl and refrigerate while fish cooks.

  5. Serve the cobia topped with a generous spoonful of mango salsa.


Flavor Tip: Add a drizzle of honey or a dash of chili powder to the salsa for a sweet-heat balance that pairs beautifully with cobia’s firm texture.
