Grilled Cobia with Mango Salsa

Serves: 4
Ingredients:
4 cobia fillets (about 6 oz each)
2 tbsp olive oil
Juice of 1 lime
Salt and pepper to taste
1 tsp paprika or Old Bay seasoning
For the Mango Salsa:
1 ripe mango, diced
½ red bell pepper, diced
¼ red onion, finely chopped
1 jalapeño, minced (optional)
Juice of 1 lime
2 tbsp fresh cilantro, chopped
Pinch of salt
Directions:
Heat your grill (or grill pan) to medium-high heat.
Brush cobia with olive oil, lime juice, and seasonings.
Grill 4–5 minutes per side, until opaque and lightly charred.
Combine salsa ingredients in a bowl and refrigerate while fish cooks.
Serve the cobia topped with a generous spoonful of mango salsa.
Flavor Tip: Add a drizzle of honey or a dash of chili powder to the salsa for a sweet-heat balance that pairs beautifully with cobia’s firm texture.
