Prep Time: 20 minutes

Cook Time: 10 minutes

Serves: 4

Ingredients:

  • 4 catfish fillets

  • 1 cup buttermilk

  • 1 cup cornmeal

  • ½ cup flour

  • 1 tbsp Cajun seasoning

  • Salt and pepper to taste

  • Vegetable oil for frying

For the Remoulade:

  • ½ cup mayo

  • 1 tbsp Dijon mustard

  • 1 tsp hot sauce

  • 1 tsp lemon juice

  • 1 tsp capers or relish

  • 1 tsp paprika

Directions:

  1. Soak catfish fillets in buttermilk for 15 minutes.

  2. In a shallow dish, mix cornmeal, flour, Cajun seasoning, salt, and pepper.

  3. Heat oil in a skillet over medium-high heat. Dredge catfish in the cornmeal mix and fry 3–4 minutes per side, until golden and crisp.

  4. Mix remoulade ingredients and serve on the side for dipping.

Flavor Tip: Sprinkle fried fillets with a dash of Old Bay right after removing them from the oil for an extra punch.
