Southern Fried Catfish with Cajun Remoulade

Serves: 4
Ingredients:
4 catfish fillets
1 cup buttermilk
1 cup cornmeal
½ cup flour
1 tbsp Cajun seasoning
Salt and pepper to taste
Vegetable oil for frying
For the Remoulade:
½ cup mayo
1 tbsp Dijon mustard
1 tsp hot sauce
1 tsp lemon juice
1 tsp capers or relish
1 tsp paprika
Directions:
Soak catfish fillets in buttermilk for 15 minutes.
In a shallow dish, mix cornmeal, flour, Cajun seasoning, salt, and pepper.
Heat oil in a skillet over medium-high heat. Dredge catfish in the cornmeal mix and fry 3–4 minutes per side, until golden and crisp.
Mix remoulade ingredients and serve on the side for dipping.
Flavor Tip: Sprinkle fried fillets with a dash of Old Bay right after removing them from the oil for an extra punch.
