Pan-Seared Rockfish with Lemon Butter and Herbs

Serves: 2
Ingredients:
2 rockfish fillets (about 6 oz each)
Salt and black pepper, to taste
2 tbsp olive oil
2 tbsp butter
1 garlic clove, minced
Juice of ½ lemon
2 tbsp fresh parsley, chopped
Optional: lemon slices for garnish
Directions:
Pat the rockfish fillets dry and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. When hot, add the fillets, skin side down.
Cook for 3–4 minutes per side, until golden and flaky. Remove from the pan and set aside.
In the same skillet, lower the heat and add butter and garlic. Sauté for 30 seconds, then stir in lemon juice and parsley.
Spoon the sauce over the fish and serve with roasted potatoes or steamed vegetables.
